Since some of my extended family is vegetarian, we have found many different ways to enjoy meatless recipes. When we get together for the holidays, it’s nice to share our traditions by serving both meat and meatless dishes. Vegetarian Christmas Morning Casserole
When you wake up on Christmas morning, you can throw a quick casserole in the oven! While your family enjoys unwrapping gifts and opening toys, you can be there for every moment too because all the preparation happens the night before. With a recipe this simple, you can spend Christmas morning being truly present with your family.
One ingredient that really brings flavor is MorningStar Farms® Chorizo Crumbles. The unique spicy flavor is a must-have for the dish! While this dish is planned as a vegetarian dish, you could also easily make it vegan with a few changes.
- 1/2 loaf of bread
- 1 bag (8 oz) cheddar cheese
- 2 cups half and half
- 12 eggs
- 1 red pepper
- 1 cup of mushrooms
- Green onions
- MorningStar Farms® Chorizo Crumbles
- Salt and pepper
To make the casserole, begin by dicing the red pepper and cutting the mushrooms. Cook the vegetables in a pan on the stove, and then place in a bowl.
Add the Chorizo crumbles to the pan and keep on medium until cooked thoroughly. Set aside.
Take the crust off the bread, and tear or slice into 1 inch squares. Add to a large bowl, and combine with the chorizo, red pepper, and mushrooms.
Whisk the 12 eggs in a small bowl until well combined with the salt and pepper. Add the eggs to the large bowl with the vegetables and bread, and stir in the cheddar cheese. Using a large spoon, mix all of the ingredients together. Let the mixture sit in the refrigerator overnight, or at least for a couple of hours.
When the mixture has sat for long enough to settle and combine, preheat the oven to 350 degrees Fahrenheit. Bake the casserole for 50 minutes.
Rinse and slice the green onions, and add to the top as garnish. Let cool for 5 minutes. Then, serve and enjoy!
