Raspberry Jam Heart Cookies Recipe from the American Girl Parties Book

Makes about 16 cookies.
Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, at room temperature
- 3/4 cup powdered sugar, plus extra for dusting the cookies
- 2 teaspoons vanilla extract
- 6 tablespoons seedless raspberry jam
Directions:
In a bowl, whisk together the flour and salt. In the bowl of an electric mixer, beat the butter and powdered sugar on medium speed until smooth. Add vanilla extract and beat until blended. Scrape the bowl with a rubber spatula. Add the flour mixture and beat on low until the dough comes together in large clumps. Dump the dough onto a work surface, divide in half, and press each piece into a disk. Wrap each disk in plastic wrap and refrigerate until firm, at least 40 minutes or up to overnight.
Position two racks evenly in the oven and preheat the oven to 325°F. Line 2 cookie sheets with parchment paper. Sprinkle a work surface with flour. Using flour as needed, roll out one dough disk to 1/4 inch thick. Using a 2 1/2 inch heart-shaped cookie cutter, cut out as many cookies as you can. Using a 1-inch heart-shaped cookie cutter, cut out the center from half of the cookie hearts. Place the hearts on the prepared cookie sheets, spacing them evenly. Repeat with the second dough disk. Press the scraps together and repeat the process.
Bake the cookies until the edges are lightly browned, rotating the pans halfway through, 12 to 15 minutes. Let cool on a wire rack for 5 minutes, then use a metal spatula to move the cookies directly to the rack to cool completely.
Spread 1 teaspoon of raspberry jam on each heart without a cutout, leaving a 1/4-inch border. Put a little powdered sugar in a sieve, dust the hearts with cut-out centers, then place on top of the jam-covered cookies. Dust the heart cookies with powdered sugar. Serve right away or store in an airtight container at room temperature for up to 3 days.
