Target has all the best holiday items right now, including festive cooking items and the cozy pajamas you’ll want to wear while you snack. If you don’t have these exact dishes, use a simple rectangular or oval serving tray, and create the tree-shape with the fruit.
Whether you serve this at a special family holiday meal or surprise you children with a beautiful dish at snack time, they are sure to be BERRY impressed. The sweet coconut yogurt dip brings out the sweet flavors of the fruit. Since I used a Light & Fit Greek Yogurt, it also adds protein without many added calories.
1 box of kiwi
1 carton blueberries
1 cup Light & Fit vanilla yogurt
2 tablespoons coconut
Peel the kiwis using a peeler, and then slice using a sharp knife to get thin slices. Place the kiwis on the platter in rows starting with one at the top, then two, three, and so on until you reach the bottom of your platter.
Rinse your blueberries, and layer them between each row of kiwis.
Trim your pineapple. Cut it into rings, and then halve the rings. Place the pineapple at the bottom of the platter.
Slice the ends of the pomegranate. Then, use your knife to trace the lines, and split it open. Place the pomegranate seeds into a separate small bowl. Take the best-looking seeds, and sprinkle them on top of the platter.
For the dip, scoop the vanilla yogurt into the bowl, and top it with coconut. Serve, and enjoy!
