In a medium-sized bowl, mix together the flour, sugar, cocoa powder, salt, and baking soda until the dry ingredients are mixed well and become a light brown color. Set aside.

In another bowl, mix the remaining wet ingredients. The oil, vinegar, and water or coffee may not mix entirely, but whisk for a few minutes to help it combine.

Slowly add the wet ingredients to the dry ingredients, and stir as you combine it.

Depression-Era Chocolate Cake & Kit Kittredge American Girl Doll GiveawayLine an 8 inch cake pan with parchment paper. Use a spatula to fill the cake pan with the ingredients. Bake at 350 degrees Fahrenheit for 30 minutes.

Prepare the frosting while the cake bakes. You will use a mixer to make the frosting. Melt the butter for 20 seconds in the microwave. In the mixer, add the butter and cocoa powder, and use a spatula to mix it by hand until it sticks together.

Put in the remaining ingredients. The cream cheese isn’t a traditional Depression-era ingredient for this cake, but it made it so much better that we couldn’t resist!

Turn the mixer to a medium setting. Whip the mixer

Let the cake cool completely before using a spatula to add the frosting. Serve and enjoy!

Kit Kittredge was the seventh Historical Character of the American Girl Dolls. She represents the Great Depression era.

Her story shares the experience of living through a time of financial struggle, as many people would have in that time. Her father loses his business, their family must take in boarders, and their home may foreclose.

However Kit maintains a positive attitude and a spirit of goodwill towards the less fortunate. She is an inspiration to young girls living through the challenging times of the pandemic today.
