When I was growing up, my mom always made the most delicious Italian cookies for Christmas. My favorite were her S cookies with a tasty glaze on top. This year, I decided to make a sweeter, vanilla-flavored version of the cookies for the holidays.
Simple Stevia S Cookies
While traditional S cookies are delectable, you can also try a lower calorie version. Some people think the traditional cookies are tart because of its almond flavoring. With this version, it keeps the unique S shape but adds a sweeter flavor.
A Twist On A Classic Italian Favorite
To make a lower calorie version, you can use SweetLeaf Sweet Drops, a natural sweetener that comes in a Vanilla Creme Flavor. I replaced 3/4 cup of sugar with only 3/4 teaspoon of liquid concentrate for a small, guilt-free batch that you and your family can devour in one day.
When you make the cookies, they have a sweet, vanilla flavor that is different from the traditional almond flavor.
For a sweet cookie, create a powdered sugar frosting and for the sprinkles. While there are stevia-based powdered sugar products, this recipe uses traditional powdered sugar.
Although the traditional S cookie is spectacular, this was a nice lower calorie, sweet version.
Simple Stevia S Cookies Recipe
To make the cookies, I used my mother’s original recipe, but I cut the recipe size into one-third of what she called for, and then I substituted the sugar for the stevia.
Ingredients for the Cookie
- 3/4 tsp. SweetLeaf® Liquid Stevia Vanilla Crème Sweet Drops™
- 3 cups flour
- 1/2 cup margarine
- 1/3 cup milk
- 3/4 Tbsp. baking soda
- 2 eggs
Ingredients for the Frosting
- 1 tsp. butter
- 3/4 cup powdered sugar
- 3 Tbsp. milk
- Red and green sprinkles
Directions
Preheat oven to 375 degrees F. Mix baking soda and milk. In a separate bowl, mix margarine with Sweet Drops™. Add the eggs, baking soda, milk, and flour. Mix and refrigerate for one hour.
Knead and roll the dough, making S-shaped cookies. Bake for 8 minutes. Let cool.
Mix all the frosting ingredients, except the sprinkles. When the cookies have completely cooled, brush frosting onto the cookies. Add the sprinkles before the frosting dries.
