Puff Pastry Pepperoni Mummies Recipe
Preheat the oven to 375 degrees Fahrenheit.
Using leftover scraps of puff pastry, wrap the puff pastry around pieces of pepperoni. Chop the yellow pepper into small squares. Top each piece of puff pastry with two pieces of yellow pepper as eyes. Make however many puff pastry pepperoni mummies you think your family will eat.
Bake for about 12 minutes. Keep a close eye on them. Since the pepperonis are thin, they will go from being nicely cooked to burnt quickly. You want the puff pastry to rise and begin to turn a golden hue before taking it our of the oven. Let it cool for 5 minutes.
For the dip, use a jar of pasta sauce. Garnish with fresh parsley for a delicious flavor and nice presentation. Serve with a side of sliced yellow peppers.
This recipe is perfect for my children because they don’t like cheese or olives. However, you can add in whatever your family prefers! A square of mozzarella inside each one with a bit of freshly grated parmesan would give it a richer taste. The olives would make more noticeable eyes, but I liked the creepy neon yellow eyes too.
Since my children are doing school at home this year, they have been missing their pizza and lunchmeat Lunchables. This recipe has that school lunch-inspired look, while also having the homemade love and care that children enjoy.
