Cherry Coca-Cola Bread with White Chocolate Cherry Glaze

Ingredients for the Bread

  • 2 cups all purpose flour
  • 3/4 cups sugar
  • 2 large eggs
  • 1 can of Cherry Coca-Cola
  • 1 packet hot chocolate mix
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • A pinch of salt
  • 2 teaspoon vanilla extract
  • 1/2 cup of melted butter

Ingredients for the Glaze

  • 7 frozen cherries
  • 1/2 cup powdered sugar
  • 1/4 cup white chocolate
  • 1/2 stick cream cheese

Directions

Preheat the oven to 350. Line a bread pan with parchment paper.

In a large bowl, mix together the flour, sugar, hot chocolate mix, baking powder, baking soda, and salt. In a separate large bowl, whisk the Cherry Coca-Cola, eggs, butter, and vanilla. Slowly add in the dry ingredients while whisking until it appears smooth.

Pour the mixture into the bread pan, and put in the oven.

While the bread bakes, begin to prepare the glaze. Use a small saucepan to heat the frozen strawberries. As they heat up, mash them until it becomes a liquid mixture. Use a spoon to break up the cherry pieces.

Add in the white chocolate chips. Mix frequently as the chocolate melts into the cherries, and make sure it does not burn.

Pour in the powdered sugar. When you mix it together, the glaze will begin to thicken.

Add in the cream cheese. Stir well until it is completely smooth with no lumps. Set aside.

Bake the bread for 50 minutes. Remove when it begins to crack on top, and it no longer looks jiggly. Insert a toothpick or fork, and if it comes out clean, the bread is done.

Let the bread cool for 10 minutes, and then move to a baking rack.

Spoon the glaze onto the bread, while allowing some to pour over to the edges.

Slice with a serrated bread knife, and enjoy!
