Ingredients

For this dish, you will need the following ingredients.

  • 1 can of cream of mushroom soup
  • 1/2 cup of milk
  • 6 eggs
  • 1 cup of cheddar, an additional 1/2 cup for the top
  • 1 cup of rice
  • 1 green pepper
  • 1 onion
  • 1 package of pre-cooked Bear Creek Smoked Sausage
  • butter
  • salt and pepper
  • 1 squirt of mustard

Sausage, Rice, and Peppers Breakfast Casserole Recipe

Prepare and steam white rice for 45 minutes or according to directions on your steamer. Preheat the oven to 350 degrees Fahrenheit.

Butter a casserole pan to prevent the food from sticking to the pan. Slice the onion and pepper, and cook them in a sauté pan with salt and pepper. Since the smoked sausage is pre-cooked, you simply slice and fry it with the onions and peppers. Take the onion, peppers, and sausage, and place them in a medium bowl.

Mix the eggs, milk, mustard, salt, pepper, cheddar, and can of cream of mushroom soup in a medium bowl. Set the bowl aside while you prepare the next step.

When the rice is finished steaming, add it to the casserole dish. Add in the onions, peppers, and sausage, and stir to mix it with the rice. Pour the wet ingredients on top, and use a large spoon to mix them into the other ingredients.

Bake the casserole for 40 min. Remove it from the oven, add additional cheddar cheese on top of it as well as some butter if it looks dry. Bake for another 5-10 minutes.

Let the dish cool for 10 minutes. Serve with hot sauce and a sprinkle of chopped herbs on top as a garnish. Enjoy!
