Since St. Patrick’s Day is around the corner, I wanted to share a family favorite. With potatoes, beef, and mixed vegetables, the soup satisfies everyone. Not only does it have the nutrient-rich vegetables your body needs to fend off winter illnesses, but it also has plenty of protein.

Celebrate St. Patrick’s Day With A Simple Irish-Inspired Beef Stew

If you’re looking for a simple way to celebrate St. Patrick’s Day, you’ve come to the right place. With a bowl of Irish-inspired beef stew, you can please the entire family. To bring warmth and joy into your home during the colder months, you can make this soup on a weekend afternoon, and enjoy the leftovers days later.

Ingredients

1 lb of stew beef

Steak seasoning

Garlic powder

Salt/pepper

1 onion

Can of crushed tomatoes

1 medium package of mixed vegetables

1 medium package of lima beans

Swanson’s beef broth 

Can of tomato sauce

1 or 2 cans of potatoes

Recipe

Using a dutch oven or large soup pan, put oil in the bottom of the pan. After getting the oil hot, put in small beef cubes that you have sprinkled with steak seasoning, garlic, salt, and pepper. Cook on high until the meat is brown. Then, add some slivered onions, and brown them too. Let the onions and beef cook on low. Add a large can of crushed tomatoes, the can of tomato sauce, the mixed vegetables, the potatoes, and the lima beans. Next, put in one of two boxes of broth. Fill almost the whole pot with the broth.

Cook on low until the vegetables are cooked well. Add salt and pepper to taste. Finally, to please everyone, you can make each bowl as spicy or mild as you like by adding hot sauce.

Tips

  • Although I used Swanson’s organic beef broth, you can also use chicken or vegetable stock for a lighter flavor. If you use chicken or vegetable stock, you can add extra flavor with Worcestershire sauce.
  • The longer the stew cooks, the better the flavor is. Don’t add too much salt or pepper at once. Allow the flavors to settle in before adding more.
  • Even though the potatoes make this a festive meal for the holiday, you can substitute them for whatever noodles you happen to have in your house. Wide noodles or even spaghetti noodles work well and help balance the rich flavor of the beef.

Without too much preparation, you can easily pull off this homemade meal together for St. Patrick’s Day. My family enjoys making this recipe even on busy workweek nights because we know the leftovers work for the next day’s lunch and dinner.
